Dark chocolate souffle with cocoa-dusted Chantilly cream. The souffle was sauced with hot chocolate sauce at the table.
Notes: The chef brought out the big guns for the last course. A right good looking chocolate souffle - ethereally light and fluffy. He doused it with a good helping of chocolate sauce, which, had I the courage to speak up, would have told him to hold back.
The inside was extremely hot - but not quite set in the middle - sadly, still liquid. But, altoghther, I managed to polish off the majority of it.
