The finished version of "Eve's Chocolate Cake." I topped the mousse part of the flourless chocolate cake with a dusting of cocoa powder and grated chocolate (too lazy to chop). I think this version looks cleaner than the one pictured in Chubby Hubby's blog (which was the original from Damien Pignolet. Even though commenters of that blog noted how wonderful it looked, I still find that both cakes kind of look rustic floppy. Is it just me? Any comments?

The good thing to note, is that the cake has this amazing chocolate aroma. I mean, the cake is practically all chocolate and eggs. Thank goodness it smells like the former! :)

"Graham's cracker crunch" with chocolate "cremeaux," Valrhona "hot chocolate," creamy fluff and toasted marshmallow.

Taste: The dark chocolate brownie was unforgivably dense and moist. Very rich. The ganache, as well, was very rich. The graham cracker crunch was very much appreciated. All in all, a very rich and dense course - intense flavors. No one finished the whole dish.

I don't know if S'mores are "in" - but had S'mores at the Avenues the month before. Click Here Could "Graham's cracker crunch" be a reference to Graham Elliot Bowles? Hmmmm...

This is Jean Georges's signature "Chocolate" dessert tasting which I've had before at Jean Georges, New York.

1. Vietnamese Coffe Liegeois
2. Salted milk chocolate and caramel layered mousse cake with Sichuan pepper ice cream (spiked with orange blossom)
3. Cacao sorbet, sesame, cassia and coconut
4. Jean Georges's signature warm chocolate cake with vanilla ice cream

I do occasionally get envious of my guest's courses - but hardly on the desserts. Although I've had the chocolate tasting at JG NYC, twice, this one was probably the most memorable. Well, actually, it was the Vietnamese Coffee Liegeois that did it.

The mousse cake was good, but the Sichuan pepper ice cream on top was the real treat. I missed any taste of the distictly numbing Sichuan pepper. Chef Johnson - what was this made of?

The cacoa sorbet with the cassia, sesame and was also very good, but not as successful, in my mouth, as the spectacularly simple cacoa bean ice cream drizzled with olive oil and sea salt I experienced at JG NYC. To be sure, this had its own merits, but I found the cocao was masked by the fragrant tropical flavors of the custard beneath it.

The Vietnamese coffee Liegeois, however, was a masterpiece. It was spiked with some kind of liquor - vodka? It was a coffee-chocolate-milkshake-lover's dream!! I could have a tall order of this and gone to bed. It was smooth, creamy, cool and terribly dark. I should really talk to Jean Georges about serving this in a wide lickable bowl. *LOL* Don't think I wouldn't do it either!

The Vietnamese Coffee Liegeois debate: so my friend and I were trying to figure out exactly what this nomenclature denoted. The Vietnamese coffee part is obvious - strong coffee thickened and sweetened with condensed milk/sweet cream. The Liegeois, I hedged, made reference to the Belgian city of Liege. While I don't think that the Liegeois (or the people of Liege) drink Vientamese coffee, the do eat (Belgian) chocolate - hence the chocolate portion of the milkshake. Do I get a cookie? Or have I made a terrible fool of my curious over-thinking self?

Kinda suck, but you know, if you’re in a cupcake emergency (and I completely understand this), they’d do in a pinch. The texture of the cake is very strange, and rather like a dense make-up sponge. At least they weren’t dry, which is the death-knell of a cupcake. The icing was pretty good, if sparse, and the “chocolate” decorations were foul and upsetting. Coworker Karen tried the vanilla cupcake and liked it fine.

Cardamom Dark Chocolate Truffles

5 green cardamom pods (or ground cardamom to taste (about 1/4 - 1/2 tsp?))
1 cup (240ml) heavy cream
7 oz (200g; a whole bar) bittersweet chocolate (61% cocoa), finely chopped
2 oz (60g; about 1/2 to 2/3 of a bar) bittersweet chocolate (70% cocoa), finely chopped
2 Tbs unsalted butter at room temperature, cut into small pieces
Unsweetened cocoa powder for dusting


With a mortar and pestle, or in a food processor, crush the cardamom seeds.

Combine cardamom in a heavy saucepan with the cream. Bring to a boil, whisk a little to distribute the flavor and remove from heat. Cover and set aside 30 min so cardamom perfume permeates the cream. Remove seeds from cream. If you used ground cardamom, no need to remove anything!

Melt both of the chopped chocolates in a heatproof bowl over a pan of simmering water (the bowl should not touch the boiling water).

Return the cream to a gentle boil. Remove chocolate bowl from heat when the chocolate is melted. Add the cream to the chocolate and beat gently to mix them.

Add the butter one piece at a time and continue to beat until smooth. Scrape down the sides of the bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until firm. (I left it in overnight, and it was much firmer, so easier to form).

Pour the unsweetened cocao powder in a dish, take a coffee spoon to scoop out the firm chocolate. Form 1 inch balls in the palms of your hand and roll around in cocoa powder.

In an airtight container layered with wax paper, you can store the truffles in the fridge for up to 2 weeks, if they last that long!

Yield: about 30.

Notes: The chef brought out the big guns for the last course. A right good looking chocolate souffle - ethereally light and fluffy. He doused it with a good helping of chocolate sauce, which, had I the courage to speak up, would have told him to hold back.

The inside was extremely hot - but not quite set in the middle - sadly, still liquid. But, altoghther, I managed to polish off the majority of it.

Notes: The chef brought out the big guns for the last course. A right good looking chocolate souffle - ethereally light and fluffy. He doused it with a good helping of chocolate sauce, which, had I the courage to speak up, would have told him to hold back.

The inside was extremely hot - but not quite set in the middle - sadly, still liquid. But, altoghther, I managed to polish off the majority of it.
