This is a "chocolate twist" - consistency somewhat to soft ganache. Elements: Date puree, Chufa nuts, Chufa sorbet, Kola nut sauce, kola nuts and cocao crumbles. (Rollover picture)

Taste: Chufa nuts have a earthy-sweetness (not unlike chestnuts) with the consistency of a wet nut (not quite right, but the closest I can come to describing it). Chufa has a slight coconutty flavor. Surprisingly, the of all of the elements on this dish, my favorite was the smallest - the date puree. it went wonderfully with whatever it is that could fit into the bite.
